Kidney-Friendly Cooking, Without Special Ingredients

Every dish below is built from ordinary supermarket ingredients, keeps sodium under 300 mg per serving, holds protein to a moderate portion, and shows you the full nutrition of one serving - potassium, phosphorus and sodium, but also the two numbers a kidney diet is most often planned without: how many calories the serving carries and how much fluid comes with it. Eating too little energy is as damaging in chronic kidney disease as eating too much potassium. Click any dish to see the timing, the ingredient weights, the method and the numbers.

📐 How these numbers were calculated

Each nutrition panel is calculated from the weight of every raw ingredient in the recipe, using per-100 g composition values in the style of the USDA FoodData Central database, then divided by the number of servings. Nothing is copied from a package label.

Where a recipe uses leaching (soaking and double-boiling potatoes, or parboiling grated cauliflower), the potassium figure is reduced accordingly - those ingredients are marked leached in the ingredient list. Skipping that step will raise the potassium well above the number shown.

Water is the total water content of the finished serving, after an allowance for evaporation during cooking. It matters if you are on a fluid restriction: soups carry far more water than baked dishes. Treat every value as a good estimate, not a laboratory measurement - real ingredients vary.

About the calories. These servings are deliberately moderate, and most of them are smaller than a full meal - the median dish here is around 230 kcal. That is by design, but it means most of them need something alongside: extra olive oil, rice, bread, pasta or an unsalted dessert. A common target in CKD is 30-35 kcal/kg of body weight per day, roughly 2,000-2,100 kcal for a 60 kg adult. Falling short matters more than most people expect: when you do not eat enough energy, the body breaks down its own muscle for fuel, which pushes urea and potassium up and undoes exactly what a kidney diet is trying to achieve. Protein-energy wasting is one of the strongest predictors of poor outcomes in CKD, so treat the calorie number as seriously as the potassium one.
